Hossegor oysters: 4 lake huts, prices and the honest truth

Hossegor oysters are eaten at the southern end of the lake, where the Capbreton canal drains it and the whole shore smells of salt and mud at low tide. The Hossegor oyster is small and salty, full of iodine, and it belongs on a plastic chair by the water with a glass of white, not on a tablecloth. I have eaten at three of the lake huts: all were very good, I have no favourite, so you cannot choose wrong.

Below are the four huts where the family that grew the oysters opens them, plus the producer visit, takeaway options and an honest answer to whether a Hossegor oyster grows in Hossegor at all. Prices and hours were checked in October 2026. No hut takes reservations or groups, and one of the four closes for winter. Where I could not confirm a price, I give the Google band or say “check on site”.

1. Chez Jérôme: the first hut and the nine-oyster plate

3202 avenue du Touring Club de France, south end of the lake. Producer since 1997. Dozen n°3 14 €, n°2 16 €, n°1 18 €, glass of white 4 €. Open in winter.

Jérôme Labéguerie opened the lake’s first tasting hut in 2004, began with 10 to 15 people a day and now serves up to 400 in season; the others followed once it worked. Six oysters cost 7, 8 or 9 € by size, nine 10.50 to 13.50 €, a format you will not see elsewhere. Google lists 10:00 to 20:30, weekends to 21:00; in winter probably split hours Thursday to Sunday, so call ahead. On an August Saturday you will queue.

2. La Cabane, Lorenzi “Chez Pif”: the blue hut that sleeps in winter

South end of the lake, the blue hut. Producer since 1998, hut since 2005. Dozen 12 to 18 €, glass of white 3.50 €. Open 15 February to 15 October and over the Christmas holidays.

Fabrice Lorenzi started farming the lake in 1998 and opened the hut in 2005; his son Théo now runs it. Doors open at 10:00, Wednesday off in low season, July and August run to 21:00. On the counter: n°1 to n°4, mussels, duck rillettes, terrine 7 €, ham or whelks 8 €, Gascogne white by the glass. Since 2023 the family also has beds in Brittany, which supply triploid oysters in summer so nothing goes milky in July. In November the door is shut, go to Jérôme or Histoires d’Huîtres.

3. Histoires d’Huîtres: the 1904 hut and the oyster vending machine

3202 avenue du Touring Club de France. Hut since 1904, new owner since February 2025. Open all year 10:00 to 20:00. Dozen: check on site (Google band 10 to 20 €); machine 7 to 9 €.

For a century this was Chez Vergez, “father to son since 1904”. It closed in 2023 after an accident involving the previous manager and reopened in February 2025 under Corentin Nicolas, 30, a former employee. Next to the hut stands Hossegor’s first oyster vending machine: 24 hours, n°2 to n°4, 7 to 9 € a dozen, card payment, lemon included. Google shows Tuesday closed and shorter winter hours. It is the only place in Hossegor where you can get oysters at 23:00.

4. Alexandre Charpentier: the Labarthe hut, in the lake since 1890

3079 avenue du Touring Club de France. Labarthe family in the lake since 1890, Charpentier’s business since 2023. Summer daily 11:00 to 21:30, shorter in winter. Dozen: check on site, Google band 10 to 20 €.

The Landes tourism board calls it an open-air oyster bar run by the Labarthe family, and the phone number is that of the old “Lou Casaou de le Ma” hut, where the Labarthe sisters were the fifth generation. The oysters are grown and finished in the lake, served with white wine, lemon, bread and butter and the farm’s shallots. I have not eaten here, so the prices come from listings, not from me. The least documented of the four, only because the name is new.

5. Producer visit: an hour behind the counter

July and August 2026, one hour, 15 € adult, 5 € under 14. Book through the tourist office, meet in front of the hut.

The only way to see behind the counter: the beds and the 48-hour purification in UV-filtered seawater without which no lake oyster may be sold. Corentin (Histoires d’Huîtres) hosts Mondays in July at 10:30 and Fridays in August at 16:00, Alexandre (Charpentier) the other way round. Not offered in October; walk the free lake trail with its information panels and look at the beds at low tide from Plage du Parc.

6. Takeaway: the machine, the phone and the Biarritz market

Machine 7 to 9 € a dozen, 24 hours. Chez Pif by phone, pick-up 11:00 to 21:00, March to October. Chez Jérôme at Les Halles de Biarritz.

The cheapest Hossegor oyster comes out of the machine. For a specific size, phone Chez Pif and collect them open or closed. In Biarritz, the Chez Jérôme stall at Les Halles lets you taste on the spot. Christmas is the peak; order books fill from mid-December. A dozen n°3 by the lake costs 14 €, from the machine 7 to 9; the difference is the view and someone to open them.

Hossegor oysters: if the end of the lake is not enough

  • La Poupe, same spot. Oyster bar since 2010, not a producer, lake oysters with white wine. Closed Friday, Google band 20 to 30 €.
  • Capbreton, 5 km south. No oyster hut in the port. Fishermen sell their catch at the foot of the Capitainerie daily, 9:00 to 12:00 and 15:00 to 18:00. Le Bon Cap puts Hossegor oysters on its seafood platters.
  • Arcachon and Cap Ferret, 1.5 hours north on the A63. France’s oyster capital: L’Herbe, Le Canon, Piraillan. A dozen at a hut 12 to 20 €, some open only in high season. Bigger and more famous, not better, only different. Arcachon itself has very good spots too; I wrote about one oyster day there on my oyster blog: The Best Oyster Tasting in France: Arcachon.

Does a Hossegor oyster grow in Hossegor? Mostly not, and that is the interesting part

The lake is an old bed of the Adour, linked to the ocean by a canal in 1876 to stop Capbreton port silting up; the first oyster concessions came in 1878, to about 40 farmers. Six producers share about three hectares, the only oyster site in the Landes. The commune says it plainly: the lake’s beds yield about 20 tonnes a year. Yet the producers sell well over a hundred tonnes between them, because most of the growing happens in Brittany. Labéguerie’s cycle: nine months as spat in Hossegor, about two years at Étel, then a year of finishing back in the lake. The lake is sanitary zone B, so every oyster spends 48 hours in UV-filtered seawater before sale. Safety, honestly: norovirus closed the lake in February 2023 and from 5 to 15 January 2024, a toxic alga from 17 to 26 July 2024. For 2025 and 2026 I found no closures. Not a guarantee, but a fact.

Practical

  • By car from Biarritz: A63 north, about 40 km and 45 minutes; from Bordeaux about two hours, tolls up to 10.80 €. A car is genuinely needed, the huts are at the end of the lake, not in the centre.
  • By bus: line 517 from Bayonne station to the Hossegor tourist office, about an hour, 2.50 € on board, Monday to Saturday; none direct from Biarritz.
  • Parking: the car park at the south end of avenue du Touring Club de France, by the Bistro Balnéaire, is free all year, huts next to it.
  • Tides: the lake fills and empties twice a day through the Capbreton canal; at low tide the east-shore beds are exposed, at high tide the water is under the terrace. Late afternoon is best, the terraces face the sunset.
  • Seasons: Chez Pif is closed from 15 October to 15 February except the holidays; Chez Jérôme and Histoires d’Huîtres stay open, Charpentier on reduced hours.
  • Budget: dozen 12 to 18 €, glass of white 3.50 to 4 €, ham or whelks 6.50 to 8 €. For two, a dozen, a half dozen and two glasses come to about 30 €.

I check the tide table and drive from Biarritz to be at the end of the lake two hours before sunset, on a rising tide. In season the blue hut, Chez Pif; in winter Chez Jérôme, because it is open. A dozen n°3 and a glass of Gascogne white, under 20 €, and I sit until the sun is behind the water. A dozen from the machine for the next evening. In summer I book the producer visit first, because you see more behind the counter.

Partly. The spat starts in the lake and the oyster is finished there, but most of the growth happens in Brittany; about 20 tonnes a year grow in the lake itself.
